
Tropical islands are warm all year round, fish is the most abundant source of protein. There are many ways to preserve fish, and the easiest and common way is sun-dried. Fish and octopus are available around the island.
A Tropical creole pantry has onions, garlic, fresh herbs and dried herbs. On Hot summer days , an easy dish with fresh herbs and tomatoes is very refreshing.
Island garden has several vegetables that grow wild with little care, like tomatoes, eggplant ( green and purple), green beans and chili peppers. Thyme , parsley are available every season. Usually, fish merchant passes by, brings fresh fish and dried fish. Fish merchant saves travel time and is very convenient for people in the village to get fresh fish at the doorstep.
